Guifiti – The Most Authentic Beverage

The most authentic beverage served at Las Cascadas Lodge is called Guifiti.

At first glance it appears as a potpourri. The odor is earthy and a little bit like flowers. This beverage is fermented over time.

Guifiti is a blend of about 10 different dry ingredients in a bottle which is then filled with rum or clear alcohol. As the material ferments, certain medicinal properties are released. These beneficial properties assist with things like increased virility, circulation, happiness, and your ability to understand Spanish.

Many types of alcohol can be used. People often make guifiti with very cheap booze. You should be careful with the cheap stuff though as the hangover is violent. The Guifiti here at the Hotel has a noticeable liquorish and eucalyptus flavor. Most Guifiti varies and taste testing is quite fun but a bit dangerous.

Guifiti Originates

Guifiti originates from the Garifuna people (African descent) who were forced into the area in the 1700's by the English and the Spanish. In Sambo Creek (40 min drive) where the hot springs and ziplines are is the closest Garifuna village is in relation to the Lodge.
You can buy a bottle of Guifiti at Las Cascadas Lodge with, or without the alcohol depending on your carry-on or checked baggage status. If cared for properly your bottle of Guifiti will last for years!

Chef Olvin fills the bottle with rum when it gets about a third of the way down from the top. He will often add a little bit of honey to cut any bitterness. The idea behind the refill is that you do not want the bark/material out of the rum for very long. When it is, the stuff rots and the bottle does not last.

It is also not correct to refill every time that you serve. This would be very bad etiquette. It is a delicate balance of attention and care over time for a long lasting bottle. Setting your bottle in the sun occasionally also speeds up the process. The first filling of alcohol should be poured out after two weeks.. The second pour will still be fresh and strong but OK to drink.

With time you will find that your Guifiti is rich with aroma and has a nice calming and warming effect. Please never mix it with anything! No ice! Best served at room temperature like a shot.
